Delicious low carb Cinnamon Muffins made with Carbquik

COOK TIME: 20 min / PREP TIME: 20 min / SERVINGS 12 / about CARBS 3-4

By trail and error I have perfected these muffins. They are not only low carb, but are also moist, oh so yummy and make the house smell good too!

Ingredients

2 cups Carbquik

2 Tbsp cinnamon

1 cup Splenda

2 Tbsp Truvia brown sugar blend

2 eggs

1 Tbsp Vanilla extract

6 Tbsp softened real butter

1 cup heavy cream


Directions

Preheat oven to 350.

Grease 12 muffin tins or use cupcake liners.

Blend all dry in together.

Add vanilla, eggs, heavy cream, and soft butter.

I use my fingers to cut everything together. The batter is thick and sticky.

Then I roll 12 large balls and put one in each muffin tin.

Bake 20 minutes.
